YAKI-IMO is a baked sweet potato. It is very popular, although it is just baked. Without sugar it is very sweet.

The reason is the temperature of heated stones is the most suitable. Why baked sweet potatoes are sweet is starchy of potatoes change sugar by heating.
Around 65 to 70 ℃ is the best temperature for this change. And heated stones is good way to keep this temperature.
We call this ISHI-YAKI-IMO(石焼き芋).
